BAKED FALAFEL WITH HERB YOGURT SAUCE

You know here on The Rock Star Diet I love transforming traditionally fat-laden/ high-calorie recipes and putting a healthier while still delicious spin on them! My Baked Falafels are no exception and will have you wondering why you ever needed to fry them in the first place!

Ingredients:

Falafels

-1 can chickpeas drained

-1 small red onion chopped fine

-1/4 cup chickpea flour

-3 tbsp fresh parsley

-1 tbsp chopped garlic

-1 tbsp chopped fresh cilantro

-1/2 tsp ground cumin

-Pinch hımalayan salt

-1/2 tsp baking powder

-1 tsp lemon juice

-1/2 tsp smoked paprika

-pinch black pepper

Yogurt sauce

-1 cup non-fat plain yogurt

-1/2 English cucumber seeded, peeled and chopped

-pinch salt

-1 clove garlic minced or mashed

-1 tbsp fresh mint

-1 tbsp chopped dill

-1/2 tbsp light olive oil

-2 tbsp lemon juice

Instructions:

1) To make yogurt sauce combine all the ingredients together in a bowl and chill while preparing falafels.

2) Preheat oven to 400 degrees. Add all falafel ingredients to a food processor and blend together till mixed. Put the mixture in a bowl and form into medium sized patties.

3) Place falafels on a lightly greased cookie sheet. You can use either coconut oil or light olive oil spray. Make sure to also spray the top of each patty.

4) Bake for 20 min, flipping halfway, or until lightly browned on each side. I like to serve my falafels on a bed of spinach with cucumbers, slivered almonds, halved cherries, and the delish yogurt sauce for dressing. Enjoy!
